⊙ 찐 밀고기 만드는 법

<조리법>


  1. 믹서에 설탕, 소금, 후추, 양파 등을 넣고 물과 함께 간다.(혹은 소금과 베지시즈닝으로도 간을 낼 수 있다.)

  2. 체에 내린 글루텐 가루를 '1'의 물로 응어리 없게 잘 반죽한다.

  3. 반죽한 덩어리를 5∼7cm 두께로 펴서 기름 바른 찜통에 얹어 찐다. 中불에서 천천히 쪄야 고루 익는다. 한가운데가 부드러우면서도
    단단하고 젓가락으로 찔러 묻어나지 않게 되면 다된 것.

  4. 완성된 밀고기는 다양한 고기요리의 재료가 된다.



◈ A 형. 밀고기 무 감초즙 (6인분)

찐 밀고기 ··················300g (견과류를 넣어 만든 것이 더 맛이 좋다.)
무강즙
························160g
검은 깨 ······················조금
*감초
식초
····························6큰술
설탕 ····························2큰술

<조리법>


  1. 찐 밀고기를 3×3cm 크기로 얇게 저민다.

  2. 저민 밀고기를 물과 감초를 1대1로 섞은 엷은 감초물에 살짝 적신 다음 접시에 펴 담는다.

  3. '2'에 무강즙과 감초 4큰 술을 섞은 무 감초즙을 얹고 검은 깨를 조금 뿌린다.


◈ B 형. 밀고기 초고추장 무침(홍어회)

<조리법>


  1. 찐 밀고기를 5mm두께와 3cm×7cm 길이로 썰어 둔다.

  2. 오이는 굵은 소금으로 문질러 씻은 다음, 반을 갈라 밀고기와 비슷한 크기를 어슷하게 썰어 놓는다.

  3. 초고추장에 '1'과 '2'를 함께 버무려 접시에 담고 통깨를 뿌린다.

    ※ 팽이버섯을 더운물에 살짝 숨죽인 후, 함께
    버무려도 좋다.
